At Coffee Jones we are committed to the coffee community. As we search the world for the finest coffees available, a strong emphasis is placed upon supporting the Sustainable Future of coffee and of the earth.

Roasting

There is nothing automated about our roasting methods at Coffee Jones. Every phase of the process is a meticulous hands-on affair. First, we cup the beans at varied degrees of roast to find the roast that brings out the best qualities of each bean. Then using the old world drum-roasting techniques, we carefully monitor each batch to insure both quality and consistency. Our blends are mixed after roasting each type of bean separately to bring out the nuances of each type rather than premixing and then roasting.

A hallmark of our roasting technique is "polishing," slowing the roasting process down in the final moments of the batch in order to let the natural flavors develop to their fullest potential. While the beans are then quickly cooled, we carefully cull out any over or under roasted beans that could taint the desired results. The coffee is then bagged in order to preserve its peak freshness and the flavor. It is then shipped to you within 24 hours of roasting.

Fair Trade Coffee

Coffee Jones participates in the Fair Trade Movement. We were the first certified fair trade coffee company in Colorado.

Fair trade raises incomes and living standards for small coffee farmers overseas while helping to protect the environment. Fair trade does not provide aid or charity, but self-reliance and equality for farmers who are disadvantaged under present trading conditions.

Fair Trade practices include paying farming families a fair price for their harvests, thereby providing them with a decent, living wage. Fair Trade also helps small farmers gain access to needed loans for working capital. Additionally, Fair Trade practices also establish direct, long-term trading relationships between buyers and farmers.

Organic Coffee

In addition to fair trade offerings, Coffee Jones also offers a number of organic coffees. These coffees are grown without the use of pesticides or fertilizers, and are certified organic by the OCIA. About Our Roaster

Carl Sims has been roasting coffee for 10 years and has kept a log of literally every batch of coffee he has ever roasted (now over 31,000). His notes over that time have helped him to develop techniques that mass roasting companies are not able to duplicate.  The result is an outstanding product. 

Much of the coffee is fair trade and organic. He currently procures beans from ten countries and has fourteen single origin varieties. This is “handmade” coffee of the highest order that is shipped within 24 hours of roasting.  He has also put a great deal of time into the study of being a barista, again noting subtle nuances that equate into a superior cup of coffee. 

Carl has been a chef, a restaurateur and a pastry chef. His background includes a position as head of the pastry department of a Hyatt with a staff of 17 people under him. He had studied under the legendary Chef Henry Trujillo of the Broadmoor Hotel in Colorado Springs.  For the last decade he has committed himself to learning about fine coffee and has great knowledge about both the back end (procuring, roasting, wholesaling) and the front end (brewing, retailing) of running a coffee business.
