Take the perfection of Mandheling coffee and make it better by being organic, and you will have Sumatra Gayo Mountain. This is the oldest and most respected organic cooperative in Indonesia. The coffee is grown on shaded, individually owned 3- to 5-acre plots in the misty, Takengon Highlands of northern Sumatra  It is meticulously cultivated and hand-picked, then dried on screen tables to allow even airflow, as well as isolation from ground moisture. The resulting coffee has a rich, satisfying body, smooth, velvety finish, with a bit more lingering spiciness than Mandheling.
