The balance of a blend in a single origin
The "Cafeterios" (coffee growers) along the banks of the Coaca
River produce a coffee that many consider to be the standard
by which all other coffees are compared. The coffee cartel
of Colombia has placed exacting standards upon the coffee they
export in order to maintain the reputation of "Juan Valdez" in
the world market. Supremo is their highest grade of coffee.
It is an incredibly smooth, balanced coffee with a medium body
and moderately acid finish. The clean, fresh aroma is the stuff
of good memories for most of us. It has the complex flavor
of lemony high tones and a slightly grassy taste lingering through
its clean finish. The grassy finish is more pronounced
in lighter roasts – a taste preferred by many as a component
in a breakfast blend.
