Sulawesi Toraja
Syrupy body, aromas of spice and a smooth, sweet chocolate
finish
It is interesting to note that until the early nineteen hundreds,
the fiercely independent Toraja people were still headhunters.
Since then, the Torajans have focused their energies on producing
a coffee that you can lose your head over. From its intoxicating
aroma of spice, to its smooth, sweet finish, Sulawesi Toraja
is an incredible cup of coffee. The body of this coffee
is so rich and heavy it is almost syrupy. Bold notes of
spice and nuts dance over the palate in playful juxtaposition
with the sweet chocolate base tones that last through the long
and elegant finish. The colonial Dutch may have had difficulty
in bringing their coffee culture to the rugged mountains of Sulawesi
(formerly known as Celebes), but it has proven to be well worth
the effort.
